* With Vegetarian Lasagna you have two options that I know of. Both are really good! But you just make your regular lasagna recipe but replace the meat with veggies. I personally would either buy a eggplant and cut it thinly and sautee it in a little bit of oil and salt and pepper and put it where you would normally put the meat. Or I would cut up broccoli florets, cauliflower, squash and zuccini and sautee it also in some extra virgin olive oil. You can add anything to these recipes and be creative. Add whatever veggies YOU like or have. :)
*Second I really really like rice lol so an AMAZING and easy easy recipe is just to make sticky rice (or regular) and then sautee some mushrooms up in some butter and a little bit of garlic salt. Then just pile on your mushrooms on top of your rice and add some soy sauce to taste.
- I found that if you buy the mushrooms that are whole and not already chopped up you actually get a lot more mushrooms. Kind of crazy.
* The easiest thing I have found to eat so far though is just veggie burgers from the frozen section at the store!! lol. Seriously they are so good. I have tried garden burgers and boca burgers. Both meatless. They are amazing!! Seriously! So I just cook them in a frying pan on my stove and then add either sauteed mushrooms or sliced avocadoes to it and make a regular hamburger out of it. It's awesome!!

Wow Jess good luck at being a vegetarian. I could never. I just love meat too much. It for sure seems like you are very health though...way to go.
